Mango Macadamia Cream Parfaits Recipe

Transform raw macadamia nuts into a creamy mousse and layer it with refreshing mango. You won’t believe this creamy treat is dairy free!

Best for: Paleo Breakfast Option

*Tip: If you didn’t plan ahead -- don’t worry. You can simply simmer the macadamia nuts for 30 minutes to get the same consistency as soaking overnight.

  • 1/3 cup raw macadamia nuts, soaked overnight* then drained
  • 3 Tbsp unsweetened coconut cream
  • 2 tsp monkfruit sweetener
  • 1/2 cup mango, diced


  1. In a food processor, combine drained macadamia nuts, coconut cream, maple syrup, and sea salt. Process 2-3 minutes, until smooth.
  2. Scoop 2 Tbsp macadamia cream into 2 tall glasses. Top with about 2 Tbsp mango. Repeat to make 3 layers.
