 Chocolate Macadamia Pie

*Tip: If you didn’t plan ahead -- don’t worry. You can simply simmer the macadamia nuts for 30 minutes to get the same consistency as soaking overnight.

Ingredients

For the crust:

  • 1 cup raw macadamia nuts
  • 1 cup almond flour
  • 1/4 tsp sea salt
  • 1 Tbsp maple syrup (or keto sweetener of choice)
  • 1/4 cup coconut oil

For the filling:

  • 1/2 cup coconut milk
  • 1/4 cup coconut oil
  • 1/4 cup paleo- or keto-friendly dark chocolate chips
  • 3 Tbsp maple syrup (or keto sweetener of choice)
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 3/4 cup raw macadamia nuts, soaked overnight* then drained

Directions

  1. To make the crust: Preheat oven to 350F. 
  2. In a food processor, pulse macadamia nuts until crumbly. Add almond flour and sea salt then pulse to combine. Add maple syrup and coconut oil and pulse until dough forms. Transfer dough to a pie or tart pan and press into the bottom and  up sides. Transfer to the oven and bake for 10-12 minutes, until fragrant and golden. Remove and allow to cool for 1 hour.
  3. To make the filling: In a small pot, combine coconut milk and coconut oil over medium-low heat for 1-2 minutes until smooth. Add chocolate chips, maple syrup, vanilla extract, and sea salt. Stir to combine, until chocolate is melted. 
  4. Transfer mixture to a food processor with drained macadamia nuts. Process 2-3 minutes, until completely smooth, stopping to scrape down sides as needed.
  5. Pour mixture into cooled pie crust. Garnish with macadamia nuts (optional). Transfer pie to refrigerator for 2 hours, until set.
